What is Bilona?
For the longest time before the rise of large commercial dairy corporations, ghee was self-prepared in Indian households by our mothers and grandmothers. They used an elaborate traditional process which involved multiple steps:
PROCESS OF MAKING BILONA GHEE
Milking by hand in a traditional way
Meanwhile in Bikaner A2 milk is heated in earthen pots for
5-6 hours on low heat
Packed in glass bottles
to maintain freshness
The butter is heated over cow dung cake chulha to make Bilona ghee.
Hand Churned for
1 hour to make natural butter
Culture is introduced & so it becomes curd overnight
What are other companies doing?
Today’s big corporations have forgotten about these methods. They are using automated
machines that churn out hundreds of kilograms of ghee in just a few minutes. In this machine based process, raw milk is spun at high speeds by an industrial motor to separate the fat, which
is then heated until Ghee is formed.
Why is it not right?
The process of ghee-making is a slow and elaborate one. To retain the most amount of
nutrients and vitamins, a low-heat technique must be adopted-this is what Bilona does. The
expedient industrial procedure used by giant companies results in a ghee that lacks nutrition
and is difficult to digest.
